I hope you had a wonderful Labor Day Weekend. I did! We had a great weekend with friends, excellent weather, very sunny, and perfect for the beach.
Summer is still here, two more weeks until it will officially be fall. I’m not ready to give up on summer yet. I thought that you would like to try this simple dish, perfect for the end of summer. It’s a watermelon gazpacho. Super healthy, light and very refreshing for a hot day.
I love watermelons, any kind. I also love tomatoes, so for me this is a very good combination. And this is a creative way to find a use for all of those extra tomatoes you have everywhere. You can drink it for a healthy snack, or serve as a side for lunch or dinner. One piece of advice though. If you do make it, definitely make it ahead of time and keep it in the refrigerator for a couple of hours. You want to drink it very, very cold. Otherwise the flavors are different.
- 2 Ibs watermelon ( no seeds or rind!) ( about a 1/4 of a medium-sized watermelon).
- 1.5 Ibs tomatoes
- 1/2 small sweet onion
- 1 small clove garlic
- 1 red pepper
- 2 tablespoons white vinegar
- 2 tablespoons olive oil
- pinch salt
Add all the ingredients into a blender and blend it up. Keep it in the fridge until cold (about 2 hrs). How easy was that?!
