Sunday Montaditos! Tres Queso and Brie & Asparagus

Holaaa!!

Today I thought I would post more montaditos. Since it’s a weekend, this is something that is very quick and easy to prepare and it’s another tapa to add to your repertoire. ¬†I’ll try to post some different montaditos every week. We’ll see how long I can keep it up… ūüėČ

Queso, queso!! If you’ve read my blog, you know that I love cheese. So, I decided to use cheese today (queso en espa√Īol). Besides a general affection for cheese, Spain also has a very good selection and variety of cheeses.Some of my favorites are: Queso Idiaz√°bal,¬†a creamy, mildy smoky, firm cheese from Pais Vasco. A good blue cheese I like is Queso Cabrales¬†from Asturias. And Queso Roncal from¬†Navarra is a smooth and super creamy goat cheese.¬†¬†And of course, I love a good Manchego, ¬†which is a little more well known. Some of these you can find in your better specialty food markets. I¬†love visiting the small, local cheese stores and seeing the huge variety of cheeses from Spain and from around the world. Don’t you?

I am a cheese lover, so I would put cheese in everything. From pizzas to pastas, and tacos to tapas yuuuumm! Everything is better with cheese.

Today I made a Tres Queso (3 cheese) Montadito and a Brie & Asparagus Montadito. (P.S. It’s asparagus season!!) The cheeses are not Spanish nor do they have to be. The beauty of these is that you can prepare them ahead of time for a party and you can make as many or as few as you want!

So let’s do it!

Ingredients:

 Tres Queso

– baguette

– brie

– blue cheese

– cheddar

Preheat the oven to 350F. Add the cheddar, brie and  blue cheese in that order, onto a slice of the baguette.

Place it in the oven for 6 minutes to warm the bread and let the cheese start to melt. ¬†Mmmm…

Serve warm!

Brie & Asparagus;

– baguette

– brie

– asparagus

Р olive oil

– sea salt

– butter

Saut√© the asparagus in a pan with some olive oil. Don’t overcook them. There’s nothing worse than overcooked asparagus! Add a slice of brie to your baguette and cook for a few minutes in the pan with butter. Remove from the pan and add the asparagus and the sea salt.

Two Montaditos; Anchovy & Pepper and Bacon & Brie

Holaaa!

I always try to make my own bread. I love it! I like to make bagels, round loaves, baguettes, any kind.  And when I make baguettes, I like to use slices for montaditos.

Beside tapas in Spain, it is very common to find montaditos. A montadito is a slice of bread with a topping on it, like a mini open-faced sandwich. You can find many different varieties of montaditos: meat, seafood, vegetable, cheese. It is very similar to a tapa, but with the addition of a small slice of bread.

For today, I made two montaditos. One with anchovies, red pepper and an olive and the other with brie wrapped in¬†bacon. Mmmmm….

Anchovies are very popular to eat in Spain. I¬†think¬†that anchovies are something that you really like or you really don’t like. There’s not much room in the middle. In my house, there is definitely¬†someone who is an anchovy lover (and it’s not me!)… so we always have anchovies. When we go to Spain, “we” always order anchovies as a tapa or a montadito.

If you like anchovies, you should try this. When I made it, I was told by the person who ate it, that he¬†felt like he¬†was¬†transported back¬†to his¬†favorite tapas restaurant in Barcelona. That’s a good compliment! I was so happy ¬†ūüôā

Ingredients: 

Anchovy montadito:

– Anchovies

РRed pepper (red bell pepper or other sweet red pepper).

– Baguette

-Olives

Grill or sauté the peppers. Cut the baguette into slices. Place the grilled pepper on the slice of bread and top with an anchovy fillet and an olive. This is a true taste of the Mediterranean!

Ready to serve.

Bacon-brie montadito:

– Bacon

– Brie

– Baguette

Cook the bacon until it’s a little crispy. But not too crispy, as you’ll be wrapping the brie. Cut the baguette into slices. Cut the brie into small chunks, big enough to fit on the slice of bread. Wrapped the brie with the cooked bacon and place a¬†toothpick through to hold it in place on the slice of bread. Put it back into the oven and cook for approximately 2 more minutes at 400 F, until the brie is melting.

Ready to serve.
