Today I am making an easy, refreshing and of course, boozy (lol) drink. All you need is lemon sorbet and sparkling wine/cava.
Did you know that Cava in Spain was modeled after Champagne in France? Though Cava uses mainly traditional, indigenous Spanish grapes; however there are exceptions. The other important thing about Cava is that it is made in the Champagne Method. However only producers in the Champagne region of France may use the term “Méthode Champenoise,” so in Spain it is known as the “Método Tradicional” or Traditional Method.
That way, cava can come from a few limited, official areas in Spain, not just one area. The most productive area for cava, and the most renowned, is in northeast Spain, near Barcelona, or in the area of Penedès. I love cava, and Llopart is my favorite. Even in the U.S., I can find Spanish and Catalan cavas. If you like sparkling wine and you have never tried the ones from Spain, you owe it to yourself to give them a try.
