Pastel de tortillas -Omelette cake-

Holaaaa everyone!

I hope the weather is treating you as good as it is to us here in Maryland. It’s so warm and nice. I have already been to the beach! 🙂

Today I made an Omelette Cake. In Spain, it’s called a Pastel de tortillas. Remember that a traditional Spanish omelette is called a tortilla.  This is a traditional dish in Spain, but maybe it is more common to find it at your home than it is at a restaurant. This recipe reminds me of my grandma. She used to make it pretty often. Who doesn’t like a tower of omelettes with different flavors?  I sure do!

I decided to make it because I received so much positive feedback from the Spanish Omelette I posted previously. Today’s Omelette Cake is made with 3 different omelettes or tortillas. One layer is the classic tortilla, with potatoes and onions. The second is with zucchini and the third is a mushroom tortilla. You can change it and substitute what you like or what’s in season. I also like to use eggplant and asparagus!

Between each omelette layer is a thin layer of tomato sauce. Make your own, like I do, or just use your favorite sauce.

Total time: 60 minutes


– 2 medium potatoes

-1 medium zucchini (or 2 small)

– 1 pint of mushrooms

– 1 small onion

– 2 small cloves garlic

– 6 large eggs

– olive oil

– 1 cup vegetable oil

– salt and pepper

– tomato sauce

For the potato omelette, see my previous post for Spanish Potato Omelette. You can follow the recipe for preparation for all three omelettes, but we will change the quantity of ingredients, since we don’t want three huge omelettes.

Zucchini omelette: Slice the zucchini very thin. Sauté with a small clove of garlic over medium heat and a drizzle of olive oil. Once it’s slightly browned, season it and set it aside. Beat 2 eggs and add the zucchini. Cook the same way as the Spanish omelette.

Mushroom omelette: Slice them. Cook with an small clove of garlic and a drizzle of olive oil. Once they’re cooked, season and set aside. Beat 2 eggs and add the mushrooms. Cook the same way as the Spanish omelette.

When we have the 3 omelettes prepared, place one on top of the other and spread some tomato sauce between each layer.



Ready to serve! This can be served warm or cold.
