Orange Salad from Southwestern Spain

I’m sorry that I haven’t posted in a while but I have been busy working and I barely have had time to sit and type my blog. I wanted to post this recipe a few days ago.  I thought it was so  light and refreshing and also easy to make. Especially when you are busy…

Hopefully for most of you, the weather hasn’t changed too much and you will still be able to enjoy a refreshing cold salad, suitable for a warm summer day. Technically, it’s still summer 🙂

The origin of this recipe is from Extremadura, located in the southwestern portion of Spain, next to Portugal. Extremadura is one of the least populated areas of Spain, with large areas of open space that are important to wildlife. It contains a lot of cultural history as well, with three UNESCO World Heritage sites, at Cáceres, Guadalupe and Mérida.

Extremadura is also know for its agricultural productivity, with abundant pork production,  fruits and vegetables, olive oil and tobacco.

This recipe is a simple salad (ensalada) for 1 to 2 servings;

  • 1 orange, peeled
  • 1/4 sweet onion, sliced thin
  • a few sliced black olives
  • 1 boiled egg (some people substitute a fried egg)
  • salt and pepper
  • extra virgin olive oil
  • Optional; chorizo, anchovies or a pinch of paprika.

Slice the orange lengthwise, very thin. Add the sliced onion, olives, and the sliced hard boiled egg. If you want to add the optional ingredients, now is the time. Season with salt, pepper and a nice drizzle of olive oil.

That’s it. Ready to serve!
