It’s almost the end of August. Schools are starting, days are getting shorter, those crisp dry days are here and everything is getting just a little more quiet. It has been a great summer for me, I really hope everyone enjoyed it. Actually, I am talking like summer was over, but it’s not yet, at least not for me!
This July, when I was in Spain shopping at the market, I saw a lot of butcher shops that had a lot of different varieties of burgers. Trust me, we have a lot of butchers, people in Spain love their meat. One that surprised me was a burger with apple. It seemed each butcher offered one and each was a little different. So for today, I thought i would make my own apple burger montadito! I call it the Montadito de Manzana y Burger. (Apple and burger small sandwich)
Let’s get into it!
Ingredients:
For the burger;
- 1/2 pound ground meat (your favorite meat. I used beef today, but I think that pork or veal would be delicious too)
- 1 1/2 teaspoons onion jam (see my onion jam recipe)
- 1 apple
- salt and pepper
- olive oil
- Baguette or your favorite bread.
Preheat the oven to 390F. Cut the apple in half and spread 1 tablespoon of olive oil on top. Roast it in the oven for about 15 minutes. Scoop out the apple with a spoon and mix it into the ground meat with the onion jam. Season with salt and pepper. Make the mini burgers and cook in a pan.
For the aioli;
- 1 egg
- 1 clove of garlic
- 1/4 cup olive oil
- 1/2 cup vegetable or canola oil
- juice from 1/4 of lemon
In a food processor, add the garlic, egg, lemon juice and a 1/4 cup of olive oil and blend well on high speed. Then, while the food processor is still blending, slowly (very slow!) add the rest of the 1/2 cup of vegetable or canola oil. Mix until it has a nice thick consistency.
Build the montadito. Place a slice of bread and then you have two options:
- Spread the aioli on the bread and the burger on top.
- Put the burger on top of the bread on top it with aioli.
Serve warm and bon profit!
Apple burger – lovely idea! Maybe we should try more fruit burgers.
