Montadito de apple, cheese y onion

For today, I made another montadito, something fun and easy.  When I was recently in Spain, I had something similar to this montadito and I decided to make my own version.
The recipe is very simple. I incorporated one of my previous recipes, onion jam. You could just as easily substitute some caramelized onions if you don’t have any of my jam on hand.  You can also substitute the cheese, a goat cheese such as chèvre would be just as delicious. And the slice of apple gives it a nice crunch and gives it a nice, sweet contrast in flavor. It’s a recipe that you can make ahead of time if you are having guests.
Recipe for 1 montadito:
– Thin slice of baguette.
– Slice of apple
– Slice of brie
– 1 tsp of onion jam 
Preheat the oven 400F.
Add the slice of apple on top of the bread. Then add the brie and finally the onion jam on top. Place in the oven and cook for 5 minutes.
Ready to serve.

When I am in Spain and get together with my family (there are 31 of us!), we can start lunch at 2:30pm and finish it at 7pm… I have always loved cooking. My grandmother it is a great, great cook and I think my love of cooking is because of her. When I was in college, my favorite breaks, were getting into the kitchen and cooking or baking something. I was able to escape the normal daily routine of law school. In this blog, I would like to share some Spanish recipes as well as other delicious recipes.
